In Cerevisiae Veritas

Brilliant straw color, thin foam. 30% Verdicchio grape must from the Broccanera winery in Arcevia, just one kilometer from our brewery, was used.. On the same morning as the hand harvest, the freshly pressed must was taken and added to the whirlpool. Fermentation with a neutral yeast brings out the wine-like notes, with floral, citrus, and fresh almond aromas typical of this grape variety. On the palate, the beer’s drinkability is evident, with the fresh and tangy notes of Verdicchio returning, followed by a dry and crisp finish.
